Mutsunohana

Mutsunohana is a Japanese restaurant that is open only for lunch two days a week (Wednesdays and Thursdays), located in Kawada-cho, Sabae City, which is known for producing Echizen lacquerware. The owner, who wanted to deepen her knowledge of Japanese culture, trained as a chef in Kyoto and has also experienced making Italian cuisine in Tokyo. The cuisine is made in a style not limited to Japanese or western centered on cha-kaiseki. It is served in a omakase style made with seasonal local Fukui ingredients with the themes of "a cuisine only available here" and "healthy cuisine that is good for the body". Please spend an relaxing time while listening to the story and thoughts of each dish. 

In addition, Ms. Igarashi selects tableware according to the dishes of the day.Also using seasonal ingredients, we offer five tastes based on the concept of Chinese medicine: spicy, bitter, sweet, salty, and sour. The main aged meat is purchased from Yoshinobu Shinbo, a butcher at the butcher shop "Sakaeya" in Shiga Prefecture. The meat is grilled quickly over high heat giving it an exquisite taste. Ms. Igarashi's attention to detail is also reflected in the dessert, as you can enjoy seasonal flavors that create a blissful taste with simple ingredients. Ms. Igarashi, who is active as a chef and tea ceremony master, will also serve a tea that matches the dessert making for the perfect ending to the meal.

Mr. Igarashi chose this area because she was fascinated by the idyllic rural scenery and the silvery snowscape she can view from the window . Enjoy a meal filled with Japanese culture and seasonal Fukui ingredients made in a mixed style of Japanese and western.

Miyuki Igarashi
Born in Fukui City. After training in Kyoto, she worked as an assistant chef at Restaurant L'asse, a famous Italian restaurant that has been awarded a Michelin star for 10 consecutive years. She is also familiar with tea ceremony.

As an initiative unique to Echizen Lacquerware making area, craftsmen have applied lacquer to glass, which was developed by a wine glass maker to make a glass fit for Japanese sake. A limited time pairing course where you can enjoy the cuisine while enjoying comparing sake in a normal glass and the original glass with lacquer coating.
